No clue. The Mrs. came home with eggplants, so maybe. maybe....eggplant baked casserole.
Lee, she doesn't have a recipe, just flour egg, and bread crumbs, she breads thin 1/4 inch slices of eggplant.I'd like her recipe for eggplant casserole, Jimmy. My eggplants are coming in beautifully!

Layers in a casserole with them fried, with added mozzarella cheese, and canned jar sauce baked till the cheese melts.
I did post a Greek moussaka which I will look for on this forum.
In all honesty, peeps makes the BEST Looking, and I'm sure tasting eggplant parmesan ....Ever!
