Todays Lunch

It’s pretty good and pretty simple. The owner/deli manager tasted it today and she wants to add it to the deli. :cool: Just need to make it in house.

16 ounce fresh cheese tortellini
Half red onion finely diced
1/2 red bell finely diced
1/2 green bell finely diced
1 cup Italian salad dressing
1 cup grated parmesan
1 TBL parsley

Im going to add a small can of sliced black olives next time. Maybe even halved cherry tomatoes and salami? Freshly shredded Parmesan is better, I’m sure. Still tuning it in so they can make it at the store.

Today’s lunch was fish and chips at the LaConner Pub and Eatery. The cod was some of the best I’ve ever had. The pieces were thick and the batter was perfect, not like most places that are breaded. we had oysters, too….

Today WinCo had oyster shooters so got two for my lunch and added a dab of hot horseradish for a little kick.

I’ve been loving the Trader Joe’s pastrami. The bread is Whole Foods gluten free white bread and probably the best gluten free bread we’ve tried. Whole Foods is just two blocks down the street from Trader Joe’s Sonos we shop them both.

Doesn't look as if you steam or otherwise heat up that pastrami, John. Just have it cold?

I am a couple of jars of oysters ahead and need to use them up before they go bad so made oyster stew/chowder for lunch. We just got back from a run to the Proctor District, poured rain the whole morning and chowder sounded like the ticket. A jar has four oysters so I cut them in 1/3’s, simmered then added a can of of clam chowder soup and some instant mashed potatoes…
