What We're Eating Sunday Nov 27 - Saturday Dec 3

Spinach salad with HB eggs, bacon, caramelized red onions, lightly sauteed criminis, red potato chunks, and a warm bacon grease/red wine vinegar vinaigrette.

We have icebox banana pudding for dessert.

Finally got our turkey day meal. Cut turkey in half. Dry brined and roasted one-half. Craig wet brined and smoked the other. Dressing/stuffing cooked underneath the roasted turkey. Homemade/scratch green bean casserole. Sweet potatoes with butter, rum, brown sugar and pecans. Gravy made with stock from neck, backbone, gizzard, liver of turkey, along with a mire poix for flavor and additional thickening power.

Thanks. I don't have a recipe. Just steam the green beans, then sautee some onions and mushrooms in butter, add flour to make a roux, then use stock and a bit of cream to make a thick sauce. That gets baked to heat through then topped with fried onion strings that are cut with mandoline, soaked in cold water, then tossed with seasoned flour and fried. It's not hard by any means and I control the salt that goes in it, plus no preservatives.
