Decided to make a quick potato salad instead of the twice baked...it was a yummy meal.

Last night, I put a rack of baby back ribs in the sous vide. This evening, I'll finish them on the grill. In the meantime, I'll make some saucy beans...and I'll likely pull some twice baked taters from the freezer. Who knows, maybe I'll even make cornbread! :unsure:

Took Mom her Chicken plate today...she mentioned spaghetti....so, tonight we're having spaghetti!! Maybe there will be some leftover for Mom too. :unsure:

I making an Apricot, Lemon, Thyme baked Chicken thighs along with roasted potatoes and creamed corn. The chicken is soaking up some thyme in the fridge, the potatoes have been par "nuked" and the creamed corn is ready to re-heat and top with parm. I'm expecting to be pleased.

Clearly, you loved her dearly. Clearly, she knew that and returned that love. Truly blessed, both of you!

DH says he could eat that again! It was tasty in my book too.

I have to confess: I'm a longtime Jif fan. Every since I read a "report" that said Jif has the fewest bugs...:eek: It just stuck with me! :ROFLMAO:

We're having pork chops. I have a couple of Duroc chops...I'm probably going to try them on the indoor grill. So far, they have proved to be pretty fool-proof. DH grabbed a jar of "Tart Cherry, Apple & Rosemary Glaze" at the Oil & Vinegar store today, so that will be tested too. We'll have...

So, last night, I got pulled over by a cop! He asked me if I have a Police record. I told him, no, but I have a couple of Sting albums. :ROFLMAO::ROFLMAO::ROFLMAO:

Winco (& other stores) has machines for making nut butters. Everything all set, just grab a container & fill it up. Convenient and less mess at home! The machines are back in the Bulk Section.

My neighbor a few houses over uses those. I know because every now and again the mail carrier decides I should try it! :ROFLMAO:

It was a good meal and we did enjoy it, very different from our usual "Russian" kielbasa and potato pancakes! ;)
