We're out camping!!! We spent some time up in Grayland and Westport. Yesterday, we moved to Long Beach, WA. It is just beautiful and the weather is great. Although, storms at the beach are nice too!

Keeping it easy...making Curried Egg Salad sandwiches on Honey Wheat bread. Maybe we'll have some Fritos with it. ;)

I'm going to try a new recipe for Hoisin Glazed mini meatloaves. Recipe calls for 10 ounces of ground pork, but I'm gonna use ground turkey instead. It is what I have/keep on hand. With that we'll have Bok choy of some sort and something else too... :unsure:

I'm making some pineapple sauce for a package of Teriyaki & Pineapple Chicken Meatballs. And, I've got a pot of Jasmine rice going. Easy, peasy.

I didn't realize that this became a new thread...LOL. I love chutney. I make a few, but I buy them too. Especially Major Grey's "Sweet" Mango Chutney (NOT the "Hot" version!). I have to have Major Grey's for my naan with Chicken Curry! Look for it at your local market or Indian market...

It is super easy. I make a "double" recipe of it, and that's what I've posted below. If you have a skillet that you've just used to cook your chicken, so much the better, but not mandatory. Recipe calls for rosemary (duh!), but I can imagine using other fresh herbs of your choice... Rosemary...
