View attachment 73897We were at Costco the other day and they were sampling burratta.  Of course, it's a big container with about a dozen large balls, and of course we bought it.  It has a use-by date of next week, and since it's fresh milk, I figured I should try to pay attention to that.  But what the heck am I going to do with all that burratta for the 2 of us???
They get you when you're hungry, then you buy large quantities of stuff that you will never use.  Once you get it home and you actually eat more than just a bite, you find that it wasn't as good as it was in the store.  I trash a lot of those super-buy specials.
By the way, I also didn't want to cook (again).  So I scrounged the kitchen for a no-cook dinner.
I found 2 jars of Rao's spaghetti sauce in the pantry (thanks again Costco).  (This is the worst jarred sauce i've ever had.  It's soooo watery.  I tried to cook it down some to reduce the water, but that didn't help.  Just don't buy it).  I have some braised short rib and red wine ravioli (Costco). Those are easier - just freze and take out what you need.I had the big container of burratta, and a bag of FRESH spinach in the fridge.
A smear of hot spaghetti sauce, topped with 3 of the ravioli, then some barely wilted spinach, and crowned with the burratta.  It was pretty good.  I thought about a drizzle of balsamic, but I was afraid it would overpower.
A no-cook dinner courtesy of Costco. The wine pairing was a Barolo that made #9 on Wine Spectator's list of the top 100 for 2024.
