Ginny - moving back home to Washington, this time on the other side of the state where it’s warmer and drier!
Lora - thank you I can’t wait to be back near our kids and grandsons!

Good deal & we're hoping/planning on moving out that way too. Probably a bit more east...

I'm making Mushroom, Spinach & Pesto Lasagna with Fontina Cheese. I haven't made it in a long time and I'm glad I chose a deep pan for it! I've also made a salad and we'll have garlic toast too.

I've got a chicken sitting in brine in the fridge. I'm going to use the rotisserie to cook it. Not sure what we'll have with it yet...

Decided on Parmesan Roasted taters and corn...good meal!

I had my favourite chicken apple sausages, sour cream and cheddar mash, and honey buttered corn.

Neither one of wanted to cook anything. I felt crappy all day, napped twice, and she is working on her quilt deadline. About twice a year we get KFC so I made the run.

I'm planning Taco Salads for dinner. I have freezer beans and freezer rice, I'll use some l/o rotisserie chicken too...in the meantime, there was a great sale on pork roast at the market today. So, I've got a couple of pots going, one with pork for Pulled Pork and one with pork for Carnitas. Some will make it to the table this week and the rest will be future freezer meals. The house smells great!

Last night was the last of the KFC. I did buy a rotisserie chicken at Costco but never cut into it. I will today and make chicken salad.

So.. I got some chili mango drumsticks from the store deli.
I'm also going to make a slightly different recipe for baba ghanoush using sweet potatoes!
With pita, and pickle spears on the side.

This is excellent!
Lee, I substituted the tahini with peanut butter, added paprika too.
Didn't add any extra salt because the flavour was there.
I used Mission whole wheat pita, even though I have naan which would have worked just fine.
I've got lots left for Saturday dinner, because tomorrow night I'm treating Jules to her belated birthday dinner.
