Well, I had a sudden hankering for beef and broccoli, but didn't feel like making it so I bought the only frozen dinner of it that I found. Healthy Choice, not horrible, but I'm inspired to make it myself soon.

Served with Smashed Radishes.

What are smashed radishes? Do you make them like potatoes?

This is a North Indian dish

Peel and chop the ridge gourd into bite-sized pieces.
Heat oil in a pan and add cumin seeds.
Once the cumin seeds splutter, add chopped onions and fry until golden brown.
Add ginger, garlic, and green chilies and cook for a minute.
Add chopped tomatoes and cook until they soften.
Add turmeric powder, coriander powder, chili powder, and garam masala powder and cook for a further minute.
Add the chopped ridge gourd and salt to taste.
Cover the pan and cook for 10-12 minutes, or until the ridge gourd is tender.
Garnish with chopped coriander leaves and serve hot with rice or roti.
