The "Breakfast" thread

My favourite brekkie meal..
2 eggs over easy, John Morrell bacon, and a buttered croissant.

We had waffles. Not pancake batter in a waffle iron. Real Belgium waffles made with yeast batter!

I get a lot of requests for this.

What you will need (For two or three)

Eggs - Two for each person.
Red potatoes, small - four or five.
Onion - 1 medium
Salt to taste
Basil to taste
Fresh ground back pepper to taste
Pinch of crushed red pepper to taste
half a pound of small breakfast sausage links.

What to do

Cut the potatoes into small cubes, about 1/8 inch.
Gut the onion into similar size pieces.
Put some canola oil in the bottom of a cast iron frying pan and heat.
Add a pat of butter for a bit of flavor.
put the potatoes and onions in.
Salt, pepper, red pepper and basil to taste.

At the same time you start the potatoes, start browning the sausage.

As the potatoes and onions start to brown, cut the sausages into about quarter in slices and add to the potatoes.

As the potatoes are nearly done start frying tow eggs.

Pu the potatoes on a plate, I use a salad plate.

Put the eggs on top of the potatoes.

Last thing I do before eating is to take my fork and drill through the yolks letting that mix with the potatoes, onions and sausage.

Thank you all. It has become an at least once a weekend breakfast here. I have been looking at some 5" cast iron skillets to plate it a bit more attractively.

Scrambled eggs with browned sausage, sautéed veggies: red & green bell peppers, onions & mushroom (cooked in butter & chile oil) & a dollop of hot pepper paste on the side.

Nothing special, just eggs and hash... I LOVE HASH!
That is homemade hash. The girlfriend is long gone, but
her recipe, which was great, remains!

Edit to add: Golly there is some good looking food here, now I am REALLY HUNGRY.

For Breakfast this morning I made a breakfast scramble with ground beef, mushrooms, onions, green pepper and mozzarella cheese served with hash browns and toast.

We had a big family breakfast at home this morning. We had a couple of friends come over as well. My daughter also hired a 5 man Mariachi to perform for us for an hour during breakfast. Food and music were good, although some of us weren't used to trumpets blasting away so early in the day. They were loud. This was all a surprise for my wife's birthday today as she awoke.
 
I made this for brunch a couple of days ago.

An over easy egg, split and pan fried Italian sausages and a bagel with cream cheese.

Trader Joe's old fashioned oven toasted oats. Man was it GOOD!! I added raisins, butter, sugar free maple flavored syrup, Ideal brown sugar sub & topped with a bit of 1/2 & 1/2.

scrambled egg w/
-creme/pepper/seasalt/garlic/creme cheese/other chit as i browse my kitch; may cheddar cheese those eggs after cooking them
i would luv a plain yogurt, too, though, i couldn't get that yet.
 
I know - this is neither new nor interesting, but we had eggs benedict again for breakfast this morning. Just one each, though - that fresh hollandaise is just too fattening!

I love taking pics of eggs bennie - they are just soooo photogenic!
