Thanks Karen!! I needed a quick meal so I took the shortcut. LOL This meal only took like MAYBE 10 minutes. I did the muffins under the broiler. LOL The cayenne pepper goes in the yolks right?If you don't have any Knorr's Hollandaise in your pantry or if (like me) you don't have a place to get it, here is a quick and easy way to make it:
□ 1/2 cup butter
□ 3 egg yolks
□ 1 Tbsp. lemon juice
□ Dash of cayenne pepper
Place egg yolks in blender with the lemon juice, turn blender on high speed for 5 seconds to blend. Melt butter in microwave until almost boiling. Turn blender back on high speed and gradually pour in butter. It will thicken into a beautiful yellow hollandaise in 20-40 seconds. The sauce may be kept warm by placing the blender bowl in warm water. The sauce cannot be reheated.

But I've been making this version since I bought my first Osterizer blender back in the 1960s(!). It was in the handbook that came with it, and it's pretty quick, has a nice bright taste, and I've always told myself that the butter cooks the egg yolks...
I got up this morning determined to make Mama's pumpkin pancakes and then realized that I did not have ANY syrup. So I made this TNT crustless quiche with minced red onion, bacon, spinach, oaxaca and manchego cheese, sliced tomatoes on top. It was good with some grilled Italian bread and fresh watermelon. Jerry gave it a "9" - high praise from him for something that does not have any potatoes.

OH JOE!! I'm in heaven!!I've gotten on a kick lately of making my own Egg McMuffins from my homemade Whole Wheat English Muffins. I cook the eggs in a muffin ring so they fit perfectly on the muffin.

Oh, I forgot to mention that like Lay's potato chips, "you can't eat just one!" Since making the whole wheat muffins, I don't even think about making them with straight AP flour. The stone ground whole wheat flour adds an incredible flavor that you don't get with white flour. My son and his girlfriend now just make two apiece when they make them.OH JOE!! I'm in heaven!!
