I didn't have anything planned or leftover for tonight so went with a BLT. The only tomato I had was one of my last Romas, so I sliced it lengthwise. Wow! All the tomato flavor but none of the messy goo in the sandwich!

So sorry to hear about Kathy's fall. Wish her well for me.I cooked a whole spatchcocked chicken on Kathy's gas grill using a recipe called Peruvian Chicken. I'll post the photo I took of the recipe I found in a doctor's office.
Anyway, it's really roasted on the grill, indirect, just charred up over direct heat at the end. It was tender and delicious from the marinade, but I don't think cooking it on a gas grill added any flavor - not enough to justify an hour's worth of gas. I'd make it again and roast it in the oven.
I took a picture of the chicken before I cut it up. We didn't eat much of it tonight since we spent hours in the E.R. due to Kathy falling on the patio incurring a blood-spouting gash in her shin. We'll have it for dinner later this week.
