I'm definitely making zucchini boats for dinner.
I had quite a bit of filling leftover from when I made the stuffed peppers last week.
Oddly enough, I had just the right amount to fill 4 boats.
Same thing for dinner tomorrow.

If I didn't cook when it's hot, I'd never cook. Oh Wait!!! I don't cook very often anymore!!!

I found some boneless short ribs in the bottom of the freezer dated April 2022. So I figured they needed to be used. Braised in celery, onion, carrot, garlic, tomato, red wine. Broke the meat into bite sized chunks and returned to the sauce. Served over polenta with parm reg. It was warm and comforting.

Served with a 2017 Nebbiolo.
