Supper tonight was a hot ham open faced sandwich with bread, gravy, and mashed potatoes.
Tina had an open faced meatloaf sandwich all from a diner in PA. I couldn't finish mine; so I washed the gravy off, and set it in the fridge for tomorrow to fry in butter and black pepper for tomorrows egg and cheese sandwiches on English muffins toasted. The dessert, was Krispy Kreme doughnuts, and assorted Italian cookies. Wow! ......... Did that meal spike the diabetes machine. Holy Cow!!!
 
I’m back in the PNW, have been since Wednesday. Today is grandson’s 5th birthday party……25 kids…🫣
Not sure what dinner will be. I’ve been going out a lot since Wednesday. Yesterday I met a dear friend I hadn’t seen for 12 years. We went to Wally’s Chowder House….my favorite seafood place. I’m a happy girl now ☺️
Wally’s is one of our favorite places to eat but rarely get up that way anymore.
 
I haven't made this in ages. We dubbed it Chicken Apollo years ago, because that's the name of the restaurant where we first had something similar. The restaurant is long gone, but I still make this dish.

Chicken breast, on a bed of sautéed spinach and shallots, topped with fontina cheese, sautéed mushrooms and garlic, and drizzled with a balsamic glaze. I served it with buttered papparedelle.
