What's on the menu Sunday, 8/1/2021 to Saturday, 8/7/2021?

Last night was baked stuffed cod. I love it and it was a HUGE hit with my father! The photo is of Dad's plate - I had leftover eggplant and carrots.

Is that Ritz cracker crumbs on the top?

Yes, Sass. Honestly, it's such an easy and delicious recipe that I'll be having it more often.

I get the little sleeves of Ritz, so they don't get stale. I used 3 short sleeves to soak up half a stick of butter and a couple of splashes of sherry for the filet that I cut in half.

You can skip the soaking in milk step, but I always do it.

Baked Stuffed Haddock

1 lb. Haddock filets (two good-sized filets)

Stuffing:
1 sleeve Ritz crackers, crushed
1 stick butter, melted
3 Tbsp. dry sherry or white wine
1 garlic clove, minced or 1 teas. garlic powder
Chopped fresh parsley or parsley flakes
Ground pepper to taste


Soak fish in a little milk first, about an hour. Mix stuffing ingredients.

Place fish skin down, in a baking dish. Pat stuffing on top. Bake at 375 F for 20 minutes. Serve piping hot with lemon wedges.
 
My pot roast is in the Instant Pot.

I made a half recipe of sesame noodles. Only this time I divided the noodles in half. One half got the regular sesame dressing. The other half got the sesame dressing with peanut butter and a touch of sugar added. This is a first run for the peanut dressing. I hope it's good after cooling.
