Grilled ham and cheese on seeded keto bread. Oh dang! I forgot the dill pickle! 🤦🏼‍♀️

It has been a tough week. One very bright spot was a trip with my friend to the Asian market where I picked up a red snapper. I'd never made a whole fish before, so I wanted to give it a try. Of course, when I put it on the platter and prettied it up, I forgot to snap a pic.

Red snapper is one of my favorite local fish. When I was a young girl, my grandmother used to take me to a restaurant called The Top of The Flame. It was a glass restaurant on top of the gas company building. I always ordered the red snapper.

The corn was pretty good for out-of-season. I absolutely love corn with butter and dill. I used fresh here because I had it, but it is also very good with dried dill.

@SilverSage I love red snapper too. We did not finish the fish, so I made the leftovers into fish cakes with the remaining dill and lemon. The fish was bigger than I thought it was and I try to avoid food waste.
