What are you eating Sunday, 6/8/2025 to Saturday, 6/14/2025?

We had a myriad of things to eat for supper..... Tina breaded and fried eggplant; and then took out some Popeyes chicken wings from the freezer. I had a ham sandwich on an onion roll, and a container of Nissan chicken noodle soup.

Tina made Pickled pigs feet for herself. That will be for her, and only her. I won't eat that. Uh uh. No way.

I'm interested in Tina's pigs feet. She grilled fresh meat then pickled it?

I picked up some pre-made eggplant involtini (rollatini) at an upscale farm stand. It's spectacular and I loved it, but VERY rich with cheeses. Could only eat half of the portion I plated, after eating my salad. Lots of leftovers. :heart:

What she does, is burn the feet on the grill until they are browned; to be sure all the bristles are burned off, even though she scrubs them. She then boils them for 7 hrs. with salted water, a hand full of black peppercorns, and a head of garlic. She uses no vinegar. She then pulls off all bones, and chills in covered bowls, and keeps in the refrigerator.

And this is something what we all Finnish people are waiting the whole spring and the first days of summer: new potatoes with the Baltic herring and a lot of dill and some butter to melt on the hot potatoes. Nothing can be better that this! Um or maybe fresh summer strawberries...
