This is the RANA chicken enchilada bake.
I like it!
A little on the spicy side, but not bad.
It's got the texture of lasagna almost, because of the layered flour tortillas.
I'll get it again.

I put some chicken breasts (seasoned with Gyro seasoning and olive oil) in the sous vide. Served with some homemade hummus, turmeric rice cooker rice, salad with "white sauce" and chopped tomatoes. DH said it was fun! For some time, I've found only huge chicken breasts at the store, so I've taken to cutting them in half, horizontally, and freezing. I use the top for "whole" breast meals and the bottom for chopped chicken meals...works for us!

Decided to eat healthy (healthier) tonight after a week of debauchery eating with my houseguest. I had all the stuff for Salade Nicoise. Mostly dressed with truffle oil, s & p. Also, I liked the tuna I had - Starkist solid white albacore in EVOO. Excellent!
