After the last 3 nights of eating out, I had an assortment of leftover (and some overcooked) seafood. Half a lobster tail, 2 scallops, 6 crawfish tails, 2 different sizes of shrimp. I cut it all up into bite-sized pieces, along with some fresh asparagus, and made a seafood asparagus risotto.

Lucky had a pickle /hoagie pizza last week.
I'm going to make my version.
I'll have plenty leftover for tomorrow, as I am working tonight and won't be cooking tomorrow.
This was super easy to throw together.
I'm having some for lunch, then another slice later.
The crust is pre-made.
I spread a small amount of light mayo on, then topped with shredded mozzarella - baked 400 for 8 minutes.
Out of the oven-
Toppings are lettuce, tomatoes, red onion, ham, bacon crumbles and pickles.
I used bread and butter pickles because they're my favourite.
Lastly , a sprinkle of Italian herbs.
This is glorious!

Out to dinner with friends at the Bayside Restaurant in Westport, MA.

We shared an appetizer of delicious eggplant fries.

Ann had the salmon/asparagus/spinach wrap.

Jan had fried oyster dinner.

I had fried oyster tacos.

The fried oysters themselves were spectacular! Tender, sweet, better than fried clams. But the restaurant doesn't know how to make a good taco, so I just ate the oysters.

Last night I had pan-fried boneless, thin cut strip steak on Italian bread (with a light schmear of butter. After the steak was removed from the pan, I placed bread in the pan butter side down to get the fond off the pan and brown it a bit. Had fresh cherries for dessert.

We’re getting acclimated to our new area since the move last Monday. Buzz found a gal that makes fresh to order Indian fry bread tacos near where we live. So that will be our late lunch/early dinner. I’ll post pics
