I'm making Cheddar Jalapeno Chicken Burgers (freezer patties) and I think I'll make some waffle fries (store-bought freezer item) to go with them.

There may be ice cream...if we can stay up long enough...LOL

I'll be making a large steak tostada for early dinner.

Tonight we are having a Mexican flan thing she got at TJ’s.

It was a Spanish egg and potato tart and pretty good. I also had two TJ’s tamales which I dressed with red enchilada sauce after the picture.

I fried the tortilla in a little olive oil until it puffed up, then drained it on paper towels.
Added cumin to the steak pieces, added cheese underneath, then the steak, tomatoes, lettuce and onion.
Sprinkled with cilantro, then added avocado salsa and garlic ranch sauce to finish.

... and of course, while I was paying for the Ham
the sun came out, and stayed out most of the day,
but I've been getting "Severe Thunderstorm Warning"
all day as well.

Seared a few scallops with brown butter sage sauce to have with my leftover linguini. So good! I really prefer that sauce to tomato sauce these days.

I forgot to take pics, but I finally cooked again.
Corn is coming in, so I got a couple ears and put them in the grill. Lemon garlic shrimp skewers, and grilled pineapple.

The pics wouldn't have looked very nice - everything on the plate was yellow.
