What are you eating Sunday, 5/11/2025 to Saturday, 5/17/2025?

I found a container of leftover minute steak with mash and gravy in the freezer.
I'll have that, with little corn nibblers.
Well, well, well...
It's eye of round steak, that I'd made a little while back. Lol

Dinner will be a couple of new-to-me recipes...it will start with a recipe I spotted this morning, Healthy Creamy Garlic Pasta, touted as an easy, 20-minute 1-pot recipe. With that, we'll have Best Garlic Butter Steak Bites - although I'm using a Rib Eye Cap Steak, 'cuz I have it and like it...😂. I'll make a simple salad to round out the meal.
Everything turned out great. DH says it is, "very, very good." I liked it too...and all very easy.

I had some veg that needed to be used - so we had baked sweet potato and roasted cauliflower for dinner. No protein, unless you conut the butter on the potato and the sprinkle of parmesean on the cauliflower.

We feel very impressed with ourselves. Low carb, low fat, low everything. (I'll be hungry and snacking later tonight)
 
I'm making an easy dinner tonight. Pineapple Meatballs, Jasmine rice and a salad. The "easy" part on the meatballs is that I will use Aidell's Teriyaki & Pineapple meatballs and add that to my pineapple sauce. Right now, I'm working on a batch of ice cream...or the ice cream machine is working on it. ;)

I made some delicious pineapple meatballs at one time.
Loved them.
I have the recipe on here somewhere.

My recipe is a very old recipe...from my very first cookbook, an early edition of the Betty Crocker Cookbook. The real name is Waikiki Meatballs. When I make the meatballs myself, I bake them instead of frying.
