I've prepped some garlicky/herbed turkey meatballs to bake in a stock and butter sauce.
I'll have them over spaghetti or rice.
Actually I had linguine.
The meatballs are fabulous and moist, pretty heavily seasoned as well.
Could only manage half the plate as I'd already wolfed down the cucumbers lol
I've got 4 meatballs left to save in the freezer for possibly a sub with provolone, peppers and onions.

Wow, that looks fantastic, Lora!

I've really tried to like ground turkey, but I'm struggling. This recipe (did you post it?) might help.

We are having dirty rice per Paul Prudhomme and leftover collard greens from the freezer. They aren't pretty so I'm not taking a picture.

We've made corned beef in a salt water/spice brine. It is gray when done but tastes pretty much the same as deli corned beef. We use David Rosengarten's recipe, although I have reduced the salt in the brine a bit, and soak the beef in water for a few hours, changing the water a couple of times, as we have aged and cut down on salt in general. He had a show, Taste, when the Food Network started. The original recipe had saltpeter, which is potasium nitrate, but it was optional. We found some and used it the first couple of times, but stopped using it. Saltpeter or Prague powder/Cure #1 are what keeps the meat pink inside.

This was actually yesterday's lunch. I rarely eat lunch, but a friend was in the neighborhood and she wanted to try a new restaurant in town. We both got "barbecued" turkey tips, which really were grilled with bbq sauce. Very good. The fries were not good, so I just ate the tips and a nice tossed salad. And a Blue Moon.

Had another salad for dinner.

We had an ok time.
Jules and her Granddaughter Emma met me at Pizza Hut.
I was exhausted from being up late because of the severe weather last night.
I got garlic Parm boneless wings and cheesey bread sticks.
We were going to go to China Garden or one of the Mexican places, but little Miss said she didn't like that kind of food. 😬🙄
