What are you eating > Sunday 11/13/2022 to Saturday 11/18/2022?

The chili came out good! Tina did a great job.

Went to a small Mexican place... not sure of their name at the moment...
Won't be back ! When the food hit the table, I was pleased with the
plating, but it turned out that everything was bland... Beans and Rice
had no flavor, and the protein was drowned in a green sauce that also had
no flavor: No heat anywhere... the liveliest item on the plate was the Red Onion Rings
on top of some lettuce...

Chicken Enchiladas in a Green Sauce
Yellow (?) Rice, Re-fried Beans that were closer to a Bean Puree'...

... and I beat the rain drops home !

Ditto my last experience at a Mexican place - ZERO seasoning!

I think I'm going to try to eat chicken noodle soup for dinner.
I've two cans of Progresso creamy chicken noodle.
Otherwise I've been eating very little.
Plain white rice, bananas and an orange.
I'm guessing your smell and taste are off, then? That's terrible.

I had covid in January and my smell and taste were gone for about 6 weeks. I lost 10 pounds. Not a fun way to lose weight. Hope you're back to normal soon.

Today is Dr. day for Tina. She took out chicken breasts from the freezer to bake in the oven.
I took 1/2 of one to use, for my firm belief of the best medicine,.........Chicken Soup. :cooking:
She will be happy to see that. She grew up on chicken soup, and I wont eat her version of soup.
She uses the feet, the gizzards, and the pluck; and the skin. When I first saw that, my eyes popped out!:yuk:
With the feet sticking out of the pot,...... that took the cake. She said "that's how we Hungarians make soup!"
"We don't waste a thing!" ..................

She’s right, you know.

I will be making my oven-baked 5-cheese macaroni and cheese dish with chicken and bacon, using havarti, gouda, white cheddar, and American in the cheese sauce with the shredded Parm on the top with the bacon (the chicken is layered on the bottom of the dish). We will have salad on the side to balance out all the dairy and cholesterol, as I use heavy cream and half-n-half in the cheese sauce instead of a roux.

I managed to find enough room in my garage freezer for my 15 pounds of fresh sausage hubby made yesterday and a turkey, so hubby went to go get me one of those that are on sale for .49 cents a pound, which unfortunately are limited to 1 turkey per person. I am likely going to end up baking it for Thanksgiving because my in-laws don't seem to have faith that my nephew will manage to do the smoked turkey to their satisfaction. I think he will, but apparently the last time he smoked one when they came over it was rather fleshy in places and they just aren't feeling a lot of trust, LOL. They told him to do just 1 instead of 2 because they are making a ham as well. I think he likely figured out where he went wrong with it last time and won't make the same mistake, but they aren't so sure...

So I am pretty happy about baking a turkey because I really LOVE turkey (my husband is lukewarm about it) and I don't get to have it as often as I like, and this is one of the few times a year that they are on sale ridiculously cheap. I am bummed that I don't get to make my jalapeno and roasted garlic turkey with jalapeno stuffing, though (they don't like spicy). And I will likely go get another turkey from a different store that has them on sale for .55 cents per lb just to have one on hand since I did go through the trouble of organizing my garage freezer to make the space--and then I can make the jalapeno turkey with that one and invite some friends over to enjoy it!

Plus I really only like ham in omelets and soups so if we didn't have enough turkey for everyone (24 people are coming) I would be eating a lot of appetizers and sides and no ham. I think it's a textural thing for the most part, as I do love the flavor, but just eating a thick slice of ham is unsettling to me for some reason. When it's in soups and omelets it's in small pieces, and when cooked in soup (like bean soup, yum) it's very tender. My mom used to make a ham at holidays and she would always glaze it and put pineapple and marischino cherries on it...everyone else in my family loved it except me. I realize that's very popular but I dislike it.

Jusa, it's important for your guests to know that a smoked turkey will probably have some red flesh near the bone. It is NOT raw (assuming that he cooks it properly) - it's a chemical reaction and is perfectly safe to eat. I used to like smoked poultry, but have gotten away from it, preferring roasted turkey.

As for ham, I've come to love it, especially a smoked shoulder, which I hardly ever see anymore. But my father doesn't care for it and, as much as I would love to it one myself until it's gone, it would be more salt than I want to consume.

Thanks! I agree with you on that point.

The in-laws are hosting Thanksgiving. FIL has a smoker and has been smoking meats for many years, so even though I wasn't tthere when he went to nephew's house (actually ny husband's nephew) for turkey last year, I'm pretty sure he knows what he's talking about.

Neohew is 30 and has had his smoker for about 2 years (he usually smokes beef or pork). If FIL says ithe turkey was fleshy, I'm thinking he wasn't basing his judgment on color. That being said, nephew is smart and I think he learns from mistakes so won't make the same mistake again. And his grandpa will set him straight if he messes up again, lol!

Not sure what I will have for dinner. Hub will have Stouffer's meat lasagna. He loves it. I've been in a lot of joint pain and not sleeping much. My stomach is not feeling great. Maybe leftover steak & mushrooms, Stouffer's mac and cheese, or soup (homemade split pea if my hands feel better).
