What are you eating Sunday 10/15/2023 to Saturday 10/21/2023?

Mom's baked chicken, half of baked potato, half of carnival squash. Fantastic!

Looks fantastic, Lee!
Can you post the link to your recipe for “Mom's baked chicken”? I had the recipe but can't find it. TIA

Thank Sass.

Geez, wish I'd had some cucumber and avocado, but I think this is good enough.
I put a pounded boneless/skinless chicken breast in the oven at 400 for 20 minutes, seasoned with smoked paprika, garlic powder and pepper.
Salad has lettuce, tomato, onion, boiled egg slices, mini bell peppers and bacon (which I left in the microwave too long) lol

Beautiful! I like cheese and olives in there, too. The addition of the colorful peppers is genius!

Nancy is making several Indian vegetarian dishes for tonight. We have a new Indian shop close by and look forward to trying new things. She got me a kilo of chopped goat but didn't feel like making it tonight - to much going on in the kitchen.

Looking forward to hearing about the goat dishes. Lots of goat in my local supermarket.

I said I have plenty of food for the weekend;BUT-
I got hungry for Seafood. Crab Cake, Shrimp,
Scallops, and a Zuchinni from my garden.
I made a real tasty Zuchinni Parmasean,
w/Onion and Chives. And a Gin w/ Vernors to drink.
I froze most of the Pinto Beans, but I did make a
little refried beans for Breakfast. Refried beans w/ a
lot of pork neck meat. I took the bones out.

As a fitness enthusiast, my breakfast typically consists of a nutritious blend of oatmeal and sliced bananas. To complement this, I enjoy a serving of whole-grain bread with a light spread of cream.

For my midday meal, I opt for a wholesome combination of rice and protein-rich pulses, providing me with essential nutrients and sustenance.

After an intense workout session, I refuel with a revitalizing portion of yogurt, which serves as my post-workout snack.

To enhance my recovery and replenish my energy levels, I indulge in a delightful banana shake, incorporating oatmeal and a touch of cream.

In the evening, my dinner mirrors my lunch, as I find the combination of rice and pulses to be both satisfying and nourishing.

DD brought over two sandwiches for lunch yesterday from a new to us restaurant. One was pastrami and the other was corned beef. Both on rye. Pickles on the side. We shared half of each sandwich. They were pretty fat sandwiches, so I had half for lunch and half for dinner. Was good, will order from there again.
