What are you eating Sunday, 1/11/2026 to Saturday, 1/17/2026?

Mandarin Combination plate,
Came with soup & pork egg roll.

Had linguine and homemade meatballs and tomato sauce.

Side Note: I bought fresh basil, oregano, and parsley. Washed and dried them. Then put in the mini food processor and chopped them coarsely. Placed in a zip top bag and then into freezer. I now have chopped herbs, garlic, and onions in the freezer ready to go whenever I need them. Saves my fingers/hands a bit of pain.
I also have home seasoned bread crumbs (includes herbs, spices, and grated Italian cheese) ready to go in the freezer.
 
Salad.
I used the lower carb chicken nuggets, red onion, feta crumbles, craisins, walnuts and baby spinach .
I was going to add boiled egg too, but this was fine.

That's what I had last night - no chicken, but HB egg and fresh mushrooms. I thought I took a picture of it, but when I went to post it, it was gone. :unsure:
