The first harvest - spinach. Excellent quality, leaves are crispy, juicy and healthy.

Cherry Turnovers turned out good. Quick and easy shortcut recipe. Not as sweet as I thought they would be. This is the first time I have ever used puff pastry and it was pretty easy. I may use puff pastry to make my spinach pies into spinach pinwheels.

Spinach, zucchini and herbs from my garden, so this was like a harvest pie.

My father had 87th birthday few days ago and I baked a cake to him for the weekend:

Basic sponge cake filled with strawberry jam and strawberry curd cheese (quark), coated with cocoa flavored whipped cream plus slices of banana.

This is really good and very easy. I can see the custard on chocolate cake or some kind of pumpkin cake for Thanksgiving.

Flan Cake
Ingredients
· 34 cup caramel ice cream topping
· Flan
· 3 eggs
· 1 (14 ounce) can sweetened condensed milk
· 1 (12 ounce) can evaporated milk
· 1 teaspoon vanilla
· Cake
· 18 14 ounces yellow cake mix
· 1 14 cups water
· 13 cup canola oil
· 3 eggs

Directions
1. Preheat oven to 325 degrees. Spray bundt pan thoroughly with cooking spray.
2. Pour 3/4 cup caramel topping in bundt pan.
3. Whip flan ingredients (eggs, condensed milk, evaporated milk, and vanilla) together with electric mixer.
4. Pour flan mixture into pan.
5. Prepare cake mix according to package directions.
6. Pour prepared cake mix over flan mixture in pan.
7. Bake for 35 to 45 minutes.
8. Cool for 15 to 20 minutes before inverting onto serving plate. Caramel topping will drip down the sides.
9. Drizzle additional caramel topping over sliced cake before serving if desired.
10. Store in refrigerator.

Today I made the "pumpkin" pie for tomorrow's dinner. I cooked a butternut squash, ran it through the foley food mill, then used Mrs Cunningham's recipe for pumpkin pie from Saveur Magazine. I just checked it and the middle was still sloppy so giving it 15 more minutes than the recipe calls for. I can make crust but use Pillsbury's crust - never fails.

and out of the oven....

I had some leftover filling and baked it as a custard.

We're making Cool Whip cookies.
These were made with yellow cake mix, 1 egg, a small container of Cool Whip, THEN rolled in powdered sugar before baking.
Cherry chip next!

Lucky, I'm going to look for that Lemon Blueberry Cake recipe and make that sucker! (found it and linked it in your photo post above. I will copy and paste it into my files.)

I'll have to try those as I'm getting tired of chocolate chip cookies. It seems like that's all folks bring to hospitality and I was no different. I had hospitality today and made four batches of Betty Crocker's chocolate chips cookies and two loaves of banana bread yesterday. Believe it or not I'd never made cookies before till yesterday. They were well received. I cracked and chopped a cup of pecans leftover from the Christmas our bowl to put in the banana bread.

this is the same recipe as the oatmeal raisin batch but I subbed 125 g chopped cashews (1 cup) for the raisins. on prior request, omitted the cinnamon.

DW thinks it needs raisins _and_ cashews . . . but they're good anywho....

Those cookies & banana bread are making me jealous!! Hah!! :applause:
