The "Breakfast" thread

I love dipping eggs!!
peep...I bought Tina these two Porcelain crucibles..with a screw on metal chrome top.

She adds butter in each and a egg in each...then she boils salted water, and drops the crucibles in the boiling water. She simmers them for I would guess 5 minutes, and takes them out. Opens the tops, and dips them with toast strips. Then she may eat one of the whites. She likes th whites cooked, and that is why the 5 minutes cooking time.
I think they call them coddled eggs. She loves them. I got the porcelain things on E-bay for her.

I would love to make that for DW...She loves banana's on pancakes...but that toast and fried nana's looks delicious....
 
I sliced the bananas and then tossed them lightly in some flour and cinnamon before frying them in butter. For the toast, it was just standard cinnamon toast (sugar, cinnamon, very light on the butter or none at all even, and then broiled). I sprinkled a bit of sugar over the top of the bananas once done because I had intentionally kept it low on the toast, not knowing how sweet the bananas would end up being, but it did need some more.

This is good using french toast instead, and adding syrup instead of sugar for a creamier, richer dish, but just as fast really.

You know those coupons on the back of some grocery store receipts? Well, one of the stores here has coupons for free chick-fil-a sandwiches when you buy a value meal. Needless to say, I save them up and every time we go to Chick-fil-a, I use those coupons. We went there for dinner last night and I got 2 free sandwiches. I tossed the buns and used the fillets for breakfast this morning along with tomatoes and bell peppers fresh from the garden!

I finally got time to look at the board today. This is what I had this morning for breakfast. Green chorizo from Mexico some scrambled eggs fritatta style with some sour cream and pico de gallo salsa, served with flame warmed corn tortillas. (Not pictured) and hot tea to drink (Lipton's)

Hey Norm....maybe you would like Green Eggs and Ham! LOL (Dr. Suese story "Green Eggs and ham")...remember that one?.. I'm sure your son had that book when he was little.

BTW.... Your Fried Potatoes with Onions and Mushrooms recipe / method...has a twinkle in DW's taste buds. She loves them that way..SOoooooooo a New Peeple Name Recipe / Food / Dish .... "Norms Potatoes" ...
 
thinking i'll either have fruit or a yoplait thick & creamy. half-asleeep, yet. it is 5:52 so i am too tired 2 think yet, lol

Instead of traditional Eggs Benedict this morning, I put a Spanish twist on the dish.

Toasted English muffin, topped with a slice of Monterrey Jack cheese.
Run it under the broiler to just melt the cheese.
Top it with just a sprinkle of finely diced, sauteed Spanish chorizo.
Poached egg.
Spoon a roasted red pepper mayo sauce over the top.

The sauce was mayo, roasted red peppers, a dollop of sour cream, and a squirt of lemon juice, pureed.

That chorizo is a shocking color. I would like to try it but my family isn't very adventurous. Well maybe my younger girl

That looks VERY interesting SS! Beautiful and yummy!! Is this a first run and is it a keeper? Or would you change anything? I may like to try it with pepperoni instead of the chorizo (hub isn't big on trying new things) do you think it would be good.
 
It was a first run, and it is a keeper. The only thing I'd do differently is put a little less sauce on top and serve the rest on the side.

I only used a little bit of chorizo, maybe a tablespoon on each half. I chopped if fine and cook the grease out of it before using it.

I think if I were using pepperoni, I'd change the cheese from Jack to a fontina or mozz. Maybe add some sun dried tomatoes to the mayo.

SilverSage that's very creative chorizo Benedict.. And the use of roasted red pepper mayo sounds delicious.

Here's a picture of some chorizo that I bought this side of the US border. There is some green chorizo and some spicy pork chorizo. I just found this place, and this is the first time I have tried their chorizo. The store sells nothing but chorizo, kind of a weird specialty store, but it is in the southern part of San Diego close to the border. They also have chicken chorizo, beef chorizo, pork chorizo. Besides the spicy pork chorizo and green chorizo. You can see this green chorizo is not as brilliant green as the stuff from South of Mexico city. I would be interested in seeing what the green chorizo looks like from down Mexico Karen's neighborhood, which is just north of Puerto Vallarta. Anyway, here's a picture of the green chorizo and spicy pork chorizo, which I've tried and has some more in the refrigerator, but this morning I'm going to finish off the Mexican chorizo and go make some Drewes famous onion, dill bread. I ran out last week.. Off to the kitchen. I go to make the dough.

peep... He shows a pic of it and it was just his method of his frying mushrooms and onions in a pan, and in another pan a gaggle of potatoes...and then when the taters were browned and cooked, he added the mushroom / onions to the taters, and served up.

We could have Norm Confirm that, but we used to make the onions and mushrooms, but never figured to add them to fried taters...
i.e. ( "Norms Potatoes") :applause::clap:Take a Bow Norm !!! hahahahahaha

Oh ok Thanks Jimmy!! I also do that. I do it in the same pan - Potatoes first for about 5 minutes then add the mushrooms, onions and seasoning and fry till brown and tender. I will try it seperately and see how that works.
 
Yep. That is what I did. Glad you like them. I didn't want to stand watch over the mushrooms and onions until they were done at the last minute so cooked them up ahead of time then added them to the potatoes to warm through just before serving. Some times I also add green and red pepper to the mix too.
