Spicy Rotel and V-8 Cabbage Soup

1 whole head of cabbage, chopped
1 c chopped carrots
1 c sliced mushrooms
1 c chopped bell pepper
1 c chopped onion
1 c chopped zucchini
1 can (15 oz) Rotel tomatoes
1 small can of diced tomatoes with jalapeno peppers
1 packet of Lipton onion soup mix
1 can of lima beans
46 oz bottle of V8 juice
cayenne pepper, salt and pepper to taste.

Put all in crockpot and simmer all day.
Can also make in large stock pot, covered- simmer and stir occasionally until vegetables are tender and flavours blend to your liking.

This will happen as soon as the weather cools !

my family taught me to, & now i, make a soup very near to yours, lollie, though we use a different tomato. we call ours 'kitchen sink soup'. now I'm hungry-- 'going a block away to get fresh bread to dip in.
 
I'm making this tomorrow, in a stock pot, but I have a question..........

Are we chopping everything the way we do "chopped onions" ? :confused:
Seems to me this is too rough a treatment........... what did you guys do ?

Also, I will tweak the recipe by adding a slab of ham, medium dice.

Looks exactly as it's supposed to.

This is the most delicious soup I've ever made and will be doing it again soon.

My cabbage head was very large, but, having chopped it already, I just doubled the quantities of the other ingredients to fit.....

I went a little too heavy on the Cayenne, at least for everybody but me.
A half cup of light brown sugar solved that without affecting the taste overall....

I diced a slab of ham steak and added it about 20 minutes before the finish....
 
Looks great, Lucky! Yes, I'd like some sort of meat in it, too!

When you chop a carrot small, or just slice it. Your missing out on the flavor of the carrot, especially fused with the soup. Chop your carrots large.
Soup looks fantastic.
 
Problem with that in a soup, Dan, is it takes much longer for the carrots to soften, compared to the other vegetables....
