Leftover bbq pork sandwiches are on for tonight.
I went to my favorite Italian food store (why are they all SO expensive?) to get some of their incredible pesto (I will never make pesto myself again!), and while I was there, I picked up 5 slices of breaded and fried eggplant ... at $12/lb. The five slices cost $7. I hate making breaded, fried eggplant, but that's crazy!
I had 2 slices of eggplant and made eggplant parm. to go with my Tyson chicken pieces with pesto dipping sauce.

I cut the recipe in half since it's just the two of us...I'm full lol
