I went to my favorite Italian food store (why are they all SO expensive?) to get some of their incredible pesto (I will never make pesto myself again!), and while I was there, I picked up 5 slices of breaded and fried eggplant ... at $12/lb. The five slices cost $7. I hate making breaded, fried eggplant, but that's crazy!

I had 2 slices of eggplant and made eggplant parm. to go with my Tyson chicken pieces with pesto dipping sauce.

Lenten Friday!

My friend, Lynne, was staying with me last week and left a bunch of celery in my fridge. I don't care much for raw celery and almost never toss anything out, but I remember liking Campbell's Cream of Celery Soup back in the day. So I made some.

Really good, thick soup!
