I went to my favorite Italian food store (why are they all SO expensive?) to get some of their incredible pesto (I will never make pesto myself again!), and while I was there, I picked up 5 slices of breaded and fried eggplant ... at $12/lb. The five slices cost $7. I hate making breaded, fried eggplant, but that's crazy!

I had 2 slices of eggplant and made eggplant parm. to go with my Tyson chicken pieces with pesto dipping sauce.

Tonight, I'm making Beef Stroganoff, garlic toast and a salad too. This is actually one of the very first things I learned to cook.
