Well, I came up with something.
I made soup from anything and everything I could put together.. and it's delicious!
This is leftover ground Italian sausage from when I made a keto sausage broccoli Alfredo dish last week.
A can of low sodium tomato soup, a can of low sodium beef broth, 2 tsp of Worcestershire sauce, frozen vegs from the freezer, I found a lonely potato down in my onion drawer, added some mixed Italian herbs, then topped it off with shaved parmesan.
I think the starch from the potato thickened it, because I'm not crazy about soupy soups.
Got some left for lunch tomorrow.
