I'll probably make my usual Polish Christmas Eve dinner: mushroom borscht, golumpki and pierogi.

I'll make what I make every Christmas Day: aged prime rib, stuffed mushrooms, peas and onions, baked potatoes.

Brandied egg nog for a night cap both nights. That's enough dessert for us.

We celebrated Christmas with our out of town kids and grandkids last Saturday and catered in Italian for that event. All that went great. So now we just decided on the main dish for our Christmas day menu.

For Christmas we have decided to go with beef tenderloin recipe by downshiftology on youtube. Looks fantastic. Ordered the tenderloin from the butcher today and picked up other items for the dinner.
Green beans
corn
garlic mashed taters
Fresh made dinner rolls.

Strawberry pie
Coconut Cream Pie

Ice Tea

I'm sure wife will add a few more tidbits but that is the most of it as far as I know. Just the two of us for dinner for sure and maybe one more, my BIL might decide to come by.

Here is the beef tenderloin recipe.

Oh, I forgot. It's supposed to be cold for Christmas, well, for us at least, lows in mid 40s, highs mid 50s to very low 60s. So, I'm putting the stuff for best hot chocolate I've ever had outside of Florence, Italy, on the grocery list. It's a fairly thin, but very rich custard with semisweet chocolate melted in fresh when you make a serving. You make the custard ahead, then warm it up to melt the chopped chocolate when you want a cup. The custard makes a pretty good egg nog as well, with a little cinnamon and booze stirred in.

I finally firmed up my guest list and my menu. Judy & I have no family in the area. Our friend Hank is 91 and alone. Our friend Dorothy is in NC for her sister's funeral, and her husband is here alone. SO we are having them both over, and it will be 4 of us for dinner.

I'm doing the deconstructed Beef Wellington I did a few years ago, with baked potato and asparagus. I don't bake much anymore, but I think I'll make a Yule Log for dessert. Just not sure if it will be chocolate with a mocha filling or yellow with a chestnut cream filling. I really need to decide - I have to make it tomorrow.

It feels like -12F outside. We have no water. I think the pipes are frozen. I may not be able to cook today or tomorrow. :( :cry:

We are having family over tonight to open presents.
The food will be various cheeses, cold cuts, ect. &
lots of cookies and Swedish nut bread.

Tomorrow we are going to Ann & Andy’s daughter’s
house for eggs Benedic. We will do a turkey next
month when things settle down, if they ever.

Looks like No water for Christmas Eve or day cooking. No water till the temperatures go up.
So far the weather report says 50’s for New Year’s Eve and New Year’s Day. Maybe we’ll have one holiday.

I’m so depressed at the moment.

Do you have all the doors open under your kitchen and bathroom sinks, with the heat turned up?
It's also a good idea to open all the taps.
Don't ever use a hair blow dryer or any sort of direct heat on the exposed pipes.

We had (lousy) frozen pizza and the baked clams. Well, I had 3 clams.

The roast was still frozen hard, so that went back into the freezer. I guess it will be charcuterie for dinner tomorrow. I make the roast for New Year's Day.

Our prime rib is in the oven. It has about an hour to go before we check temp. We use 200° one hour per pound, then rest for 45 minutes or so while tented, then seared in 500° oven. It got a dry brine with salt for 36 plus hours. Sides are all prepped and ready to go in oven when roast comes out. Mushroom bread pudding, zucchini and yellow squash casserole, and new potatoes that were steamed, then smashed, and tossed with S and P and EVOO. Cheesecake for dessert, then hot chocolate later.

Do you rinse off the salt before roasting the beef, Karen?
