What's On The Plates? Sunday July 27- Saturday August 2 2025

I'm working on a sheet pan meal. On the sheet pan: BBQ Turkey Mini Meatloaves, rainbow carrots & green beans. Cooking at the same temp will be a box kit for Au Gratin taters. I may have to broil a couple of peach halves too. :unsure: Hey, they gotta be used!
 
I don't post leftover dinners (I have those a LOT), but this one was so pretty and delicious, here it is again!

That looks delicious! Is that a mushroom, potato or eggplant? I want to know how you made this! ☺️

I eat a lot of eggplant in the summer. There are so many wonderful-looking stuffed eggplant recipes to try, but this one (I adapted from a vegan recipe) was delicous! I think the roasted vegs, especially the head of garlic, really made it!

I need to go to Wauseon this afternoon and thought about stopping here.
They have all types of coffee drinks and sandwiches, soups etc..
 
I'm making what I would call a version of chili, but Martha Stewart calls, One-Pot Turkey Skillet Pie. Basically, one makes a chili with ground turkey, red bell pepper, onion and mushrooms (replace with zuke or beans, if you so desire)...then top with cheddar biscuits (I use a box mix for Red Lobster Cheddar Bay Biscuits) and bake. It is tasty and is easy on clean up :ROFLMAO:...since DH spent the day trying to get the satellite dish working in the camper, I think he'll appreciate an easy evening.

Took Kathy for a late lunch to Belle Isle in Winthrop, highly rated for fresh seafood, short on atmosphere.

Kathy got her lobster roll and I got my fried oyster roll. Both were wonderful but the fries and onion rings weren't worth eating the carbs.
