What's On The Plates Sunday December 29 - 2024 Saturday January 4 2025

We'll have Hoppin' John today...a New Year's tradition here. Yesterday, I made a big pot of Albondigas, as DH has been craving it!

I made another batch of the chicken, spinach, pesto soup that I love, but this time, I chopped up a red pepper instead of carrots and used tiny shells instead of cannelini beans. Still delicious, but I prefer the beans, as they make a heartier soup.

I'm making an Open Face Steak Sand, of sorts. Think I'll grill the petite filets on the Que, set them on sour dough garlic toast and serve them with air fryer baked taters and sheet pan Brussels Sprouts with shallots/bacon/walnuts, etc. (the Sprouts are a recipe from Martha & Marley meal kit recipes...but no kit here...but here's a link to the online Recipe Link - See Card Here) We really like the Sprouts recipe, so I do repeat them. If I remember to take a pic, I'll post it later! ;)

Too cold out to use the bbq...so I broiled the steaks instead. Yummy!

I neglected to take a pic! We had tempura shrimp, steamed asparagus with olive oil and lemon and bulgur with chopped green onion and toasted pine nuts.
Bulgur is a great source of fiber with a low glycemic index, much better for you than brown rice ☺️
