Angel hair Macaroni's and a plain marinara sauce I made last night.

Pumpkin Bread For Dessert (Thanks to Tinamommy the Baker )

I'll post pics soon as we eat. LOL

ps: Let's see if Tina picks up the flavor of a small bay leaf I dropped in the sauce........ ( I threw it away before she saw the sauce )
 
I don't use bay leaf in my marinara, but I do use it when making meat sauce.

Tonight was yet another replay of chicken stir-fry. It was my choice for dinner, so I picked this and even made it. :yum:

I earned my supper tonight!

Broke down a skid of wood pellets, and painfully loaded them on my PF Flyer wagon, and brought em around back under the porch.
Then I blew the leaves from the front yard.

Had Nice Angel Hair spaghetti with a nice sauce I made Last Night.

Sauce not too thick, and Light In Color.

Yeah! I saw Lidia the other day, and she said she put a small bay leaf in her sauce that she was making for clams and muscles.

I never use bay leaf, but I gave it a shot. It was hardly noticable, and Tina didn't pick it up that I used it. Plans are to use that same sauce for Clams and Muscles another night.:):cooking:

I have used powdered bay leaf in Italian Hot Sausage, and it wasn't bad. Just gotta watch to not use too much.
I even dropped large onion petals in as the sauce cooked, and then I discarded them. Just for Flavor. My Kids see one onion, and they won't eat. PITA's Kids. It's cause their Grandma's spoiled them. Big Time!

I can't get over the beauty of the tomato sauce, it looks so rich and tasty!

Thanks lifesaver....I thought it was just right.

I didn't want a overpowering garlic taste...I wanted to taste the Onion, and the celery; which made it more garden tasting.
I like celery juice in my sauce, and meatballs.

I just minced a stalk of celery so fine It didn't look like celery.
Then the carrot...I just kept peeling and peeling it until I couldn't hold the acrrot anymore. Then, I minced it so fine. The same with two tomatoes.
The onion was a 1/4 medium one..and I just peeled the petals apart, and let them simmer with the sauce. 1/4 tsp of grated garlic..salt and sugar to taste, but not too sweet. Added a can of tomato sauce..and let it all cook on a diffuser on low till the watery fluid evaporated. I then added a little olive oil, and let it sit overnight. Ooops! Just a pinch of powdered basil and the 1/2 leaf of a small bay leaf.

I just put the remaining away, and tasted it cold, and It seems that if I don't use it for seafood wednesday, I'll use it for pizza sauce.

I am not fond of frozen spaghetti sauce. My mom used to make sauce, and she froze it for use when she was working to speed up suppers, but when she retired, she said,"there is nothing like a fresh made sauce!"

Joe and Jimmy.. the dinners look great.
I made some tuna salad this morning to pack for my lunch.
Took a sleeve of Ritz crackers along, and some carrot and celery sticks, string cheese, and my beloved peach yogurt.

Tuna salad is great. You got me thinking about it now.

I could go for a ground bologna sandwich with that sandwich spread with the little pickles in it, on light toast. Shrimp salad sounds good too!
 
I like that ground baloney (we call it baloney here lol) for a sandwich spread, but it depends on what deli it comes from.
Some use junk baloney and mix it with something akin to Miracle Whip.
It's just awful, yet people buy it.

Got a deli here that uses half beef baloney/half ham and mayo and sweet pickles.
Then there is ham salad.. pure ground smoked ham, with pickles, mayo etc..
Omg.. now I'm wanting one.
Darn ya! lol

We like to make light sandwich bread toast. Like Wonder Bread, or a good pullman bread. I love that pullman bread. It is perfectly square. Restaurants use it a lot for toast etc.

Well, we let the toast cool a little; and then a light coat of margarine or butter, a slice of bologna (Yes...only one slice ), and a light coat of mayonaise. Cut it in 1/.4's and snack snack snack away!.....I could eat three sandwiches (Whole Ones) and tea or coffee. Eating all while watching Old TV shows like Man From U.N.C.L.E., or Hazel, or George Burns & Gracie Allen Shows. ((( WAY Before your time kid )))

I'm at the stove frying the leftover spaghetti ( Plain / no sauce ) in oil and butter.
When the edges and most gets crispy, I will salt it, and eat it by pinching fingerfulls.
It's better than potato chips.

Mom used to cook a lb. of regular spaghetti, and make that for us when we were kids.
We would sit and watch TV.... and she said,"The spaghetti like this, is the only one you can eat it with your fingers! " "Mom won't get mad!" ... Just DON'T let me see you kids wipe the greasy fingers on the furniture or the carpeting, or I'll Kill the two of you!" ... Kill then, meant a whacking with the broom or whatever she grabbed at the time. ...

I was frying when the computer went...* Doink* ...The New Mail Sound. Ha Ha Ha
That's why I like my computer in the kitchen. Tina doesn't like it; especially when she is cooking, and I'm looking at everything she is doing, and at the same time just shaking my head a little, back and forth! .... God forbid I should go Thu Thu Thu with the tongue!... SHE HATES THAT! ... Poor Thing!!!... She can't take a joke!!

Of course there's nothing like fresh sauce, but I find nothing offensive about sauce that has been frozen. I used to bottle my marinara and water can it, but that takes waaaayyyy too long after having cooked the sauce for 5-7 hours already. Maybe I'll develop a more discriminating palette when I retire and have the whole day to play in the kitchen. But as long as I'm still working, the freezer will be my friend.

There is a way for everything Joe!!

The way...for frozen spaghetti sauce... is to use it within a reasonable time.
Too many times, and as always is the case....that spaghetti sauce gets swirled around in this house, and moved in the freezer, and then 6 months later, all the water is ice crystals and the sauce is starting to discolor.
That has always been the case. ( In This Family Establishment )

It's like the San Marzano Tomatoes. A certain somebody (I wont mention names)., goes 70 miles to an outlet store to get Italian 112 oz. cans of San Marzano pomadoro.. OK? .... Nice! ??? ..... 4 cases of 8 I think they pack them.

That was 5...(FIVE ) Years ago. DD took like 5 cans....we used 6,.....and the rest are burried in the garage under cases of hunts sauce, and canned other sh#t.

I have to drag them out. They say as long as the cans are not puffed up, and the galvanic coating is not black in the can, they should still be ok.

L O L ....

BTW.... The organization in your freezer is excellant. I could tell you use things from the freezer.
In this house, I could ask for bacon, and be told there is none, and a week later, I can find 3 lbs in the big freezer, and all in various spots. Ha Ha Ha Ha Ha Ha .....NOOoooooo! It's more like Grrrrrrrrr!!....

One More thing.... I gotta mention this while it is still fresh.
The k-cups for the Keurig coffee makers...right?? ..... Thousands of flavors the (THEY's) bought. Berry / coconut / vanilla / hairy cherry / stinky winky /...you name it right?? All sitting stacked in the Little Green Room ( we call it that; it used to be a laundry room , and storage pantry room etc. )
Oh! and when the (Theys) joined the Gevallia Flavor of the month club! BIG HA HA HA

Some of the coffee boxes has never been open.

ps: Just to clear the air here! ( I don't ever drink flavored coffee; unless its a shot of annisette or Sambuca. )
 
No cooking here today.
Going to stop at the deli on the way to work and see what goodies I can find for dinner.
 
I had a TSTO (turkey, spinach, tomato, onion, mayo, on sourdough) sandwich for lunch. I have started using fresh baby spinach on my sandwiches instead of lettuce and really like it.

Lots of choices for dinner, but haven't made a decision

I had a cornbread disaster the other night when I made the beef/vegetable soup. Mixed it all up, heated up my cast iron skillet, poured the mixture in, into the oven, and nothing......flat, flat, flat......checked the date on the package of mix.....2009 :huh:. So I just finished a clean-out-the-pantry project. Lots of stuff got tossed.

We decided to have beef tenderloins on the grill. Wind was blowing 20-30 mph but they turned out wonderful. Got two heads of cheddar cauliflower from my BIL this morning. We blanched and froze all but enough for supper. Made some buttered noodles and topped the cauliflower with some shredded cheddar.

Monday's Supper was Easy Easy.
Whole Wheat Pita Breads turned into Personal Pizza's.

Last night...I made this fried spaghetti in oil and butter and salt.
Nice and crispy, and definetey finger food, like potato stix.

Finished it up for breakfast.

Asked the gal behind the counter to scoop some pasta salad into a container until I said 'okay, that's about right'..
Grabbed a bag of Lay's at the checkout and a Tazo iced black tea.

I love deli stops.....especially when hungry.

It is weird....I am not that familiar with past salad.
I had it once, and the girl at the party used the green and white Rotelli ( we always called them "Springs" ) and she just used olive oil...chunks of cheese, and diced salami and pepperoni. That is about the only way I will eat a salad like that.

No vinegar. Not on macaroni! LOL... Not for me anyway.
 
cooksie I was gonna open it today, but Tinababy made meatball soup.

What is scary is that can has a easy open pop open lift lid, and there are some older ones with only can opener to open. I think they should be trashed.
Along with that 1982 can of spam. yuck!

Today we celebrated National Mini Food Day!

Ha Ha Ha ...... Only Joshing!!!

Tina had a nice Mini Beef Meatball soup cooking when I awoke this morning,

We had it with these teenie weenie cheese Ravioli DW found in the store. I never saw such little ravioli. They were good too! LOL

Then I had some Sausage (Mini ) that DD made and brought over.
