What's cookin'? Wednesday...

Will be working this afternoon, then going to Irish session tonight, so need something quick. I have a chicken alfredo pizza in the freezer, made it with one of those crescent roll for baking (one whole piece), alfredo sauce, shredded chicken tossed with pesto, and some mozzarella cheese. It's been baked, wrapped in foil, and frozen. I'll just reheat.
 
I'll probably go to a place called Suever's and get the bacon potato soup and one of their fresh baked, big fat pretzels.
 
I really don't feel like cooking tonight.

But if I do it will probably be eggs, sausage (Johnsonville breakfast sausage). Not sure what the carb will be - biscuits, home fries or waffles.
 
I was laying in bed last night (actually 2:30 am) and trying to fall asleep; counting meatballs jumping over stacks of spaghetti...LOL, and I have a plan for nice Cheeseburgers with fried onions for DW, and with chili sauce on mine with minced fine onions.
Foil Pouch potatoes / onions, and DD just dug up a whole milk crate full that they planted on the farms potato patch. She brought a bunch over. Yummm!

DW has a 2:30 Dr appt. that cold is lingering, and she has to be careful she doesn't get a Pleuricy infection which she is susceptible to.
Better to be safe than sorry!...
 
We're going to be having smoked turkey legs ("Eddy's" brand - absolutely terrific stuff), or what my husband calls "Fred Flintstone Pteradactyl Leggs" because they're so huge - lol! Will be accompanied by sliced baby potatoes sauteed in butter & extra-virgin olive oil, then tossed with a baby kale/Swiss chard mix until the greens are just wilted. A little salt, chopped garlic, & crushed red pepper flakes will finish that off.

The legs are so large, that what's left of them will be saved for another meal - probably to be added to some homemade mac & cheese - & the leg bones themselves will be saved in the freezer to add to a future pot of bean soup. Can't beat getting 3-4 meals out of 2 turkey legs!
 
I think I shall drink dinner tonight.. I just have to decide if it will be Pina Coladas or diet sprite vodka and lime on the menu.

Was cleaning out the cabinet, and found a Light Blue Bottle, with that nasty Queen 8!tch on the front.... Now that's a creep up later, and all of a sudden..%Y&$&^Wham**....it hits you.

WhenI first tried that stuff...I hit three shots in 15 minutes.. WOW! did it Hit!!!

Update:

I Told DW I was planning on making pouch potatoes and cheeseburgers...welllllllll

She scoffed at that idea, and said I was close with the burgers, and close with the potatoes; but she said she would really enjoy Meatloaf, and Mashed Potatoes if at all possible.
I said."Well dear. lets see!"

I said,"If you rub my magic lamp. hahah..we can surely accomodate your wishes!".... She looked and said,"If I Kick you in the Hind, Then we'll see what happens!"

Geeze...leave it to a woman.

I've been MIA for a couple days. It's good to be back.

I made breaded pork chops - again - hash browns, spinach and some cinnamon applesauce for dipping.

Actually...I have never made a meatloaf where we can say..Oooo,It tastes the same as the last one, or "Make it this way all the time.

They all are different. This one was a Handful loaf...hahahah
A handful of this and a scant handful of that kinda meatloaf..

The ingredients are the same, and The difference is the chopped meat.
Fresh vs. Frozen and thawed. Beef Pork & Veal ..or just beef.
Chuck vs. round..and etc.

So unless everything is exactly the same (and this one I baked on the grill), then there is a possibility of same taste and texture.

Dinner tonight was city chicken, mashed potatoes and gravy and French style green beans...

Well, I made what we call, "Baked Burritos". We usually have tacos/burritos the day before and we reheat the left over meat, mix in some refried beans...then I spray the bottom of a cake baking pan with grease spray. I then put a small can of Old El Paso Re Enchilada Sauce on top. I then warm up tortillas on my stove, make a burrito with the toppings you like...put them in the pan on top of the sauce. Keep doing this til you make the quanity you want of need. I then take what left over taco meat that is in the pan, and top the burritos with it. Then pour another can, this time a large can of Enchilada Sauce on top of that, then top it with cheese. I bake til cheese is melted and it bubbling on the sides of the pan...I'll put pics up for some of these steps...
