What's cookin'? Wednesday...

Dinner tonight was city chicken, mashed potatoes and gravy and French style green beans...
OMG...I can't believe my eye's.
We make them too.
They look so delicious...
The kids love them, and it's DIL's favorite meal.
I've got to put them on the to make soon list!

Do you use Pork and Veal Cubes?
We used to, but now we grind the veal and pork.
 
Actually...I have never made a meatloaf where we can say..Oooo,It tastes the same as the last one, or "Make it this way all the time.

They all are different.

me either always just kind of make em... some have been more inspired than others though

here just a cheese plate, got home late from a neighborhood meeting and needed something low effort to snack on

Thanks Jimmy! I use both pork and veal cubes. I like the texture of the cubes so I don't know about grinding them.....but to each their own. lol

I don't rightly know Panch. lol I'm not sure what country chicken is......This is a regional thing and it's veal and pork cubes, breaded, fried and baked. I grew up on this......

Jimmy, the meatloaf dinner looks so delicious. One of my Top 10 faves!

I've been MIA for a couple days. It's good to be back.

I made breaded pork chops - again - hash browns, spinach and some cinnamon applesauce for dipping.


Yum! Spinach and Hashbrowns.

Well, I made what we call, "Baked Burritos". We usually have tacos/burritos the day before and we reheat the left over meat, mix in some refried beans...then I spray the bottom of a cake baking pan with grease spray. I then put a small can of Old El Paso Re Enchilada Sauce on top. I then warm up tortillas on my stove, make a burrito with the toppings you like...put them in the pan on top of the sauce. Keep doing this til you make the quanity you want of need. I then take what left over taco meat that is in the pan, and top the burritos with it. Then pour another can, this time a large can of Enchilada Sauce on top of that, then top it with cheese. I bake til cheese is melted and it bubbling on the sides of the pan...I'll put pics up for some of these steps...


Oh My! That looks and sounds wonderful. Makes me want to try it.

I grew up in Mansfield O. well I was born there. I loved loved loved City Chicken. Never had it again when I moved from O. When I saw Jimmy made it, I had flash backs of those days. Country Chicken is just another name for Country fried, beef or chicken patties covered in thick gravy.
 
WOW EVERYTHING looks fantastic!! You all eat some great meals last night. I want some of everything including that pot pie!! YUMMY

We had breakfast sausage, biscuits and over easy eggs.
