We made it home so, as soon as I get some energy -- vacation is tough work! -- I'll heat up some fried rice and make sweet & sour chicken too.

Tina took out two packages of beef cubes from the freezer. She wants to make beef soup with one package, and something else with the other. Maybe grind it to make burgers? We shall see!

I have a package of kielbasa links. I'm thinking of doing the Hasselback BBQ thing with them. I made a new batch of the Maple BBQ sauce. Still thinking on the sides....

Had a leftover chunk of steak so made a cheese steak quesadilla with muenster and zero carb tortillas. Not bad!

For lunch today, I made some beet green soup using beet greens from my garden. It turned out fantastic! Much better than it looks! I will definitely make it again.

For dinner, we had spaghetti with meat and mushroom sauce, and a side chopped Italian salad with garden cukes and tomatoes.

We got some thin sliced pork steaks from the Carniceria that Buzz will grill with whole nopales. He’ll have an ear of fresh corn too with his.

My mother used to make soup like that with hamburger that I hated, bleh!

Today's supper will be Pasta e fagioli, and corn on the cob for lunch.
Breakfast was an onion bagel, with a heavy shmeare of cream cheese and lox.

This is ok.
I melted some cream cheese into leftover pasta sauce, tomatoes - then added some spinach to cook down.
Not pretty, just ok.

Bacon Wrapped Filet. Omelet 3 eggs, Onion, Mushrooms,
Tomato, Bean Sprouts, Mozzerella, Cheddar.
Tomato Juice.

Sides were l/o mac salad, coleslaw & a new batch of a new recipe for potato salad. All good stuff.

Ooops, forgot to push "post reply" for the above message. Sigh. Today, I have a pork loin in the sous vide. We'll have that with roasted root vegetables and a salad. I picked up a couple of salad "kits" at the market, just have to choose one.

How do you make your nopales? I've never made them but am so intrigued!
