I tried a new recipe for Tacos. They were tasty, but not sue I would make them again. I found the recipe in a search for something to use up the l/o rotisserie chicken. I made a pot of lime rice too. I'm stuffed!

We had wedge salads with grilled asparagus. There was enough bacon, egg, cheese, and nuts on the salad to make it filling.

That wedge salad DOES look great! Might have to make one myself. But then I'll have 3/4 of a head of iceburg to get rid of.

Supper tonight was leftover Sloppy Joe's on split top hot dog rolls. We find out the split top buns
hold more without over spilling, and it makes a great roll. I hate when the rolls crumble apart
when trying to hold the whatever your eating on it.

I'm about to put mini-meatloaves in the oven. We'll have scalloped taters and white corn with the loaves. There will be l/o's to share with mom...and something easy for her to eat.

Truthfully, I could have eaten 4 lol
I fried the white corn tortillas in olive oil, then added saucy beans and beef, tomato, pepper, onion, shaved Monterey Jack cheese, then topped them off with garlic ranch sauce.

Supper was London broil, baked potatoes, and corn, from last years in the freezer.
The kids came over after work to join us. Chewy brownies for dessert.

Fridge still not working. Freezer ok. Been putting ice in fridge but not helping much. Earliest repair appointment is Wednesday 6/4/2025.

So food/eating is undecided till I get hungry or need to eat so I can take my meds.

NOW internet is down. Internet through my phone is slow as hell without Wi-Fi.
