A couple of days back, I bought some ground chicken. Thinking that I ought to do something with it, I just made 3 individual/mini chicken meatloaves and stashed them in the fridge for a bit. They have been seasoned up with my AP seasoning + salt & pepper, shredded apple, shredded Jack & Cheddar, an egg and a bit of panko to hold them together. Too early to cook them for dinner just yet. I'm thinking white corn and scalloped taters. Oh, and I made an apricot glaze for the mini meatloaves too. Recipe is inspired by a meal kit service that I used in the past.
Hot dogs (no split hot dog rolls ), with homemade Boston Baked Beans and brown bread. Everything was excellent except the heirloom tomato (not worth the extra cost).
We took asparagus over to Ann and Andy’s and they invited us to Lobster Shop for an early dinner. I had one of the specials, blackened rockfish. and was wonderful. I had to have the pomme frits deleted from the dish because they were floured.
