I'm going to make a sheet pan dinner with chicken and roasted vegs. Possibly a salad too.
I didn't do this on a sheet pan after all.
I placed the vegs (carrots, potato and onion) in a glass pyrex baking dish with the chicken on top.
In the oven at 400° for an hour.
The chicken came out crispy and juicy.
Put some chicken gravy on the plate before adding the chicken and vegs.
Super yummy.
Leftovers tomorrow!

Tonight will be chalupas. I’ll use chicken we canned last year and what I don’t use will try making chicken noodle soup or chicken and dumplings. We’ll see.
Had the chick and vegs leftovers from last night.
Only thing different is, I added butter to the reheated vegs and slathered the chicken thighs with Martha Stewart's Quick BBQ sauce.

We are going to Long Beach, WA today. We’ll eat there for lunch. I’ll buy oysters and maybe make soup tonight depending on how late we get home. She wants to eat at a nicer place so there may be leftovers. I want fish and chips, again.
I tried a Screamin' Sicilian frozen pizza last night, a supreme. Added some olive oil and Italian seasoning.
Not horrible. They've got the toppings down, they just have to work on the tasteless, cardboard-like crust.
It was actually better cold this afternoon!
