What are you eating Sunday, 1/4/2026 to Saturday, 1/10/2026?

I swear, I never tire of making these.
This time, I added ham, bacon, spinach, red onion and thick shredded cheddar.
Didn't add the cottage cheese per the recipe, just about 1/4 c whole milk.

It looks wonderful! Might you point me to the recipe for this? I tried a search. Came up with many pages but didn't see the recipe??? Thanks in advance!
 
Tina won on her idea of meatloaf dinner. She made it. It was a jar of sweet baby rays for the coating ,but I like the ketchup / mustard / Honey / lemon glaze myself. Mashed potato's and gravy and peas with it. I wait for sandwiches with mustard for a bed time snack.
Dessert was an apple puff from Aldi market, and it was loaded with apples.....

This afternoon we went shopping at H-Mart in Federal Way. We decided to have a late lunch in their Mandarin cafe and it ended up being more like a full meal. Nancy had the broccoli beef and I had the seafood and pork stir fry. The kimchi and pickled daikon were excellent - everything was excellent. We were the only white folks eating there. Everyone was so friendly and look forward to going back. We got sushi to bring home and will have that tomorrow. I did get all the fixings for Saturday night’s vegetarian sumo stew.

I'm taking my lead from @Sass Muffin and making a Tortilla Egg Bake. It is based on the recipe, but I've added my twist, meaning I looked thru the fridge to see what I have. I found onion, (canned) diced green chilis, ham, roma tomato, mozzarella and cheddar cheese too. I'll be popping it in the oven soon. Here's a "before" picture, minus the cheese....

Just had a slice of Di Giorno "wood fired" frozen pizza Supreme. I added a few slices of fresh mushrooms, a little more shredded Italian cheese blend and - the kicker - drizzled with truffle oil before baking in the oven.

Spectacular!

I suspect that any pizza will be better with a drizzle of truffle oil.
