TGIFriday, 4/15/2011, Whats on the menu today?

I've got chicken soaking in a buttermilk brine for fried chicken. With it will be mashed potatoes and gravy, salad and biscuits.
 
Couldn't think of a thing! So finally said to heck with it, and it's going to be grilled burgers, fries, and baked beans.
 
I bought ALOT of chicken today on sale, so it's gonna be chicken, not sure how I'm going to prepare it yet.
 
Well, the salad mix didn't look the greatest so I went with green beans instead.

Mama, that fried chicken looks soooo good!

I made oven baked chicken breasts that were coated first with mayo, coarse ground mustard and a couple of different spices. I made a sauce from the drippings from the pan, butter and white wine. Served it with rice and buttered carrots. It's a keeper!

oh mama, i've been craving fried chicken so badly. thanks for the link to your recipe. i'll be making it next week, for sure.

mhend, your chicken sounds good. mayo and ground mustard? hmmm. gotta try it.
 
Thanks Bucky! I had never used mayo before, but I got the idea from a Paula Deen recipe. She used lemon in hers, but DH doesn't care for lemon, so I played around with it some. It really kept the chicken moist. It was pretty much inhaled, so I guess it's going it the rotation! :)
 
i cooked a 5-minute dinner during tv ads. whole wheat angelhair w/ some sundried tomatoes i plumped w/ pasta h2o while the angelhair cooked, chopped some garlic-stuffed olives & a few additional cloves garlic, halved a few kalamatas, crumbled on gorgonzola, drizzled on olive oil & seasoned w/ a few herbs. along w/ some crusty bread.
ex-jake is due here in like 2 seconds so maybe i'll make him a batch, too & get him to take a pic. my camera is a gonner. new phone on its way, though, so food pix soon

sage, thanks! that pasta was a keeper- so simplistic yet oh so yum!

my new phone should be here monday-ish, give or take a few. i chose rather decent megapixels so i'm gonna begin taking food pix then.

Spicy Bean Burgers

1 1/2 cups dry chick peas, soaked overnight, pressure cooked 25 minutes
1 egg slightly beaten
1 4 oz can diced chiles
3 - 4 scallions finely chopped
3/4 cup bread crumbs (panko works best)
2 tsp worcestershire
2 tsp hot sauce (I've also omitted the chiles and subbed 1 minced chipotle and adobo sauce)

Drain, then mash the chickpeas while still warm (one could omit this and use 2-15 oz. cans drained). Allow to cool. Add remaining ingredients mix and transfer to refrigerator to cool. The mixture is easier to press into patties when it is cold. Coat a burger press with cooking spray and press out in a generous 1/3 cup measure. Makes about 8 - 10 patties. If placed between sheets of wax paper freeze well for about 6 months.

Mama, we keep dry beans for those times thinking ahead is possible. Then there's always a store of canned beans labeled open in case of emergency. :-)
Yes, 2 cans work just fine.
