what diameter pan do you use for the grill veggies?
here it would be for two people - so 6-8 inch would be max....
That’s a sauté pan and would have to measure it but would say it is 6-8”. It’s my favorite pan, have had it a long time, and can’t remember where I got it.

I don't usually buy ribeyes because of all the fat, but yours look so good I may give one a try this summer!

yup. I wonder if the 9" dimension refers to the top rim diameter?
I got a two-handled pan from Darto - the "floor" diameter is about 6.5 inches - might work for that approach....

That’s a ribeye. Matt had to take his off the menu because folks complained about the fat. He now serves a NY Strip. The fat that has been grilled and smoke is the bees knees.

I'm VERY glad he debunked the poke test. I've never done it for the reasons he stated.

I do take my steak out of the fridge about an hour before cooking, salt it, then pat it dry before cooking.

He didn't mention letting it rest after cooking - I assume he doesn't believe THAT is a myth.

My first fire of the year… These were cut a bit thinner than I like but tasted great. The ribeyes and fillet mignon came from WinCo, the porterhouse from the commissary and all were good. I used cherry wood for smoke.

Tonight’s Costco ribeye.… I made a huge fire of cherry, plum, and pear wood along with competition charcoal.
