Thanks Deelady for the muffin cooking times and tips. Next time I'll try making them that way.

I used all white sugar and I also substituted extra virgin olive oil for the vegetable oil because I didn't have any.

It's all gone now and every crumb was enjoyed! I'll definitely make this again.

I was going to make banana bread today anyway, I'm pretty sure I could find me a carrot or two to throw in.

Olive Oil Biscuits

1 c AP flour
1 c cake flour
2 t baking powder
1 t salt
2 T evoo
3/4 c buttermilk

Set oven at 500.

In large bowl whisk dry ingredients.
In small bowl combine olive oil with 2/3 c of the buttermilk, blending well.
Make a well in the center of the dry ingredients, and add the oil/milk, stirring until the dough pulls away from the bowl, then add remaining buttermilk.

Place dough on floured surface, pat to 1/2" thick, fold then pat out again.
Repeat 4 times, patting out to 1/2" thick.
Cut into rounds and place on baking sheet.
Bake for 8-10 minutes.

Corn Doggie Muffins

2 boxes instant cornbread mix
1 can creamed corn
2 eggs
1/3 cup milk
1 pkg of good quality hot dogs or little smoked sausages

Set oven at 400.
Combine the cornbread mix, creamed corn, eggs and milk.
Spray muffin tins or use paper muffin cups.
Spoon batter in until half full.
Press dogs or sausages into batter.
Bake 15-20 minutes.

ya know, I`v often wondered about that, corn bread mix and it`s taste Does tend to lend itself towards Muffin mix.
I`d completely forgotten about trying that experiment, Thanks ;)

Sweet Cheesy Cornbread With Chilies and Crab

1/2 c yellow cornmeal
1/2 c buttermilk
1/2 c flour
1 T sugar
generous pinch of Old Bay Seasoning
1/2 t baking powder
1/4 t baking soda
1 beaten egg
2 T melted butter
1/2 c cream style sweet corn
1/4 c shredded pepper jack cheese
1/4 c sharp shredded cheddar
2 oz of green chilies (drained-half a small can)
8 oz Chicken of The Sea White Crab Meat

Combine cornmeal and buttermilk and allow to stand for 20 minutes.

Add the dry ingredients, then the egg and butter, mixing well.

Next, stir in the corn, cheeses and chilies, then lastly the crab.

Pour into a greased 8x8 baking dish.
Bake @ 375 for 20-25 minutes, or until golden.

Ho-lee-COW! Now this sounds incredible. And right up my alley! You don't get much more southern than corn bread, and being from the coast, I LOVE some crab! I'm all over this one. Thank you! :thumb:

It's based on another recipe I found, only I added the Old Bay and subbed crab for crawfish meat, chose to use yellow cornmeal over blue and knocked the recipe in half lol

Think this could be done with a box of Jiffy Cornbread Mix?
That's as close as I will EVER get to making it from scratch.
(I'm not a huge cornbread fan, but this sounds good....)

The Jiffy Mix is GOOD! We use it all the time for cornbread muffins! :hide:

Making from scratch isn't that hard though. With a good CI skillet and the right technique, it's a sure thing every time.

And would SOMEONE make this recipe already. I need pics! :yum:

May have to breakdown and make this in the next day or so.

Kimchee, you're going to have to play with some of the ingredients I think.
You could go with adding the egg or water (whatever it is they suggest) according to the box-- then add the Old Bay, the cheese, corn and the rest.
Might be a little too moist unless you actually make it according to the recipe I posted.

Sweet Potato Bread

We always seem to have leftover sweet potatoes or squash at this time of year. This is a tasty low fat bread we enjoy on a fall or winter weekend morning.

Pre-heat oven to 350

1 cup whole wheat flour
1/2 cup of unbleached flour
2 tsp baking powder
1/2 tsp cinnamon
1/2 tsp mace
1/8 tsp nutmeg
1/2 tsp salt

Whisk above ingredients together and add the following wet ingredients:

1 egg slightly beaten (or 2 egg whites)
1 cup of mashed sweet potato
1/2 cup dark brown sugar
1 medium apple peeled and grated or 1/2 cup unsweetened applesauce
1/4 cup skim milk
1/2 cup raisins

Mix and transfer to a 8" x 4" loaf pan. Bake for about 1 hour.
 
Lemon Poppyseed Buttermilk Muffins with Lemon Honey Butter Spread

These were so tasty, we each ate 3 for breakfast! I do wish the tops had browned a little more - maybe next time I'll increase the baking soda and cut a little of the baking powder....Maybe.

The spread was perfect as is.

Lemon Poppyseed Buttermilk Muffins

Preheat oven to 350F.
Grease 12 muffin cups or line with paper cups.

Whisk together in a bowl:
2 cups flour (10 ounces)
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 1/2 Tlbs poppy seeds

Whisk in another small bowl:
1 1/4 cup buttermilk
1 egg
1/2 cup plus 2 Tlbs sugar (4 1/2 ounces)
2 Tlbs fresh lemon zest (don't skimp here)
1/4 cup melted butter

Quickly combine the 2 bowls until just combined - do not overmix!

Scoop into prepared pans and bake 18-20 minutes.

Lemon Glaze

In a small bowl, combine 1/4 confectioners' sugar with 1 Tlbs fresh lemon juice.
Drizzle offer warm muffins.

Lemon Honey Butter Spread


Whisk together in a small dish until smooth:
1/4 cup softened butter
2 Tlbs honey
1 tsp fresh lemon juice

Banana Nut Bread - Bisquick and Cream Cheese

My Boss’s wife made some Banana Nut Bread the other day and he brought some in. I LOVE Banana Nut bread, and her’s was awesome. Naturally, I asked for the recipe.

Banana Nut Bread - Bisquick and Cream Cheese

Ingredients
1 cup granulated sugar
1 package (8 ounces) cream cheese, room temperature
2 ripe bananas, mashed (about 1 cup mashed)
2 eggs
1 teaspoon vanilla extract
2 cups biscuit mix (Bisquick, Pioneer, etc.)
1/2 cup (or more) chopped pecans or walnuts
 

Preparation
In a large mixing bowl, cream sugar and cream cheese until light and fluffy. Beat in mashed bananas, the eggs, and vanilla. Stir in biscuit mix and pecans just until ingredients are moistened. Pour into a greased 9x5x3-inch loaf pan. Bake banana bread at 350̊ for 40 minutes to 1 hour, or until wooden pick comes out clean when inserted in center. Cover with foil the last 15 minutes of baking if too brown. Cool banana bread before slicing.
