Coffee Praline Muffins

1 3/4 cups flour
1/3 cup brown sugar, packed
1 tablespoon baking powder
1/4 teaspoon salt
1/2 cup chopped pecans
1/2 cup butter, melted
3/4 cup milk
2 tablespoons instant coffee powder
1 1/2 teaspoons vanilla extract
1 egg
1/8 cup brown sugar, packed
2 tablespoons chopped pecans

Heat oven to 375 degrees F. Lightly grease 10 muffin cups.
In a large mixing bowl, combine flour, 1/3 cup brown sugar, baking powder, salt and 1/2 cup chopped pecans.
Add melted butter, milk, instant coffee, vanilla extract and egg. Mix until all of the dry ingredients are absorbed.
Fill the prepared muffin cups 2/3 full.
Combine the remaining brown sugar and pecans, sprinkle over the tops of the muffins. Bake at 375 degrees F for 18 to 20 minutes, or until a tester inserted into the center of a muffin comes out clean.

Bump for Peeps!

I just finished putting these in the oven! I changed a few things though I added 1/2 brown and 1/2 white sugar, I added nut meg and walnuts in place of the peacans. I was worried when my little one saw me mixing in the carrots, I thought it might change her mind in wanting them so I told her they were for giving the muffins pretty orange sprinkles.....it worked!! She got excited:clap::clap:

OMG these are soooooooo good!!! I will never again make just plain banana muffins! And to top it off my daughter is on her second and said "THESE are my favorite!!" :D

I made these last Monday but didn't have any pecans or walnuts so just added some nutmeg (as suggested).

Wow, they are really moist and good! It's just 2 of us so we still have a few slices left. I can't believe how moist they are still 4 days later. According to DH none of our Mom's ever made anything so "wet". :lol::yum:

I made them in a loaf pan because that's what the recipe showed but would really like to try them in the muffin tins so I could freeze some.

But I don't know how to figure out the cooking time between the loaf pan and muffin tins. Any help would be appreciated.

Glad you guys liked them TJCAT :D I actually bought bananas and carrots yesterday to make them again as well!
When I made the muffins I made half the batch without walnuts and half with and either way was delish! To adjust the time for the muffins I believe I just started checking them after 25 mins or so...after you see they have set and are getting golden test one with a toothpick if needed, or I usually just lightly touch the top of one and if it springs back like a sponge it should be ready to take out.

Just currious TCAt....did you use all white sugar or the 1/2 brown and 1/2 white?
 
Banana Nut Bread

3/4 cup sugar
1/2 cup butter, softened
2 eggs
1 cup mashed ripe bananas
1/3 cup milk
1 tsp. vanilla
2 cups all-purpose flour
1/2 cup chopped nuts
1 tsp. baking soda
1/2 tsp. salt

Heat oven to 350F. Grease bottom only of 9x5 or 8x4-inch loaf pan. In a large bowl, cream sugar and butter until light and fluffy. Add eggs and mix in bananas, milk and vanilla.
In another bowl mix flour, nuts, baking soda and salt.
Add to creamed mixture, stir until dry ingredients are just moistened. Pour into prepared pan.
Bake at 350F for 50-60 minutes or until toothpick inserted comes out clean.
Cool for 5 minutes and remove from pan. Cool on wire rack.

I doubled this recipe when I made it.

Hahaha.......I wrapped it up and put it in the freezer so no one would eat it. We'll have it later during the holiday. lol
