How do you like your spaghetti?

A post by Embryodad (Jimmy) has me wondering how everyone likes their spaghetti served with a tomato-based sauce, whether or not it has meat in it. Not talking about any kind of white or clam sauce here.

Do you like the pasta tossed with the red sauce, or do you like the sauce spooned over just the middle of the pasta, leaving lots of white?

We prefer the latter, so sometimes you get a forkful with lots of sauce and sometimes a forkful with just a little.

I love spaghetti. DW makes the best sauce. My dad made a great sauce and DW copied his and modified it a bit and wow. Fantastic. It does have meat in it, and carrots, and onion and lots more. She uses a mini chopper to chop up the meat after it's browned. Also does the carrots and onions in the mini chopper so you never know they are in the sauce.

She serves it like you Lee, noodles and we add as little or as much sauce as we want. I normally over sauce mine. It's so good.
 
I always doctor up the sauce with a little brown sugar and spoon over the sgetti. I like a good meat sauce if I’m not serving meatballs. And some Texas toast cheese-bread to soak up the extra sauce. And just like that I’m hungry. :ready-to-eat-19:
 
Whatever tomato based sauce I make, I usually spoon sauce on top. Except if I am reheating one serving of sauce in my bowl. Then I put pasta on top of hot sauce and give it a turn or two, then top with grated cheese.

With oil based sauces like aglio e olio (garlic and oil) (with broccoli) or white clam, the pasta usually gets tossed in the pan with the sauce and some pasta water before serving.
 
Pasta is made to absorb whatever sauce you use to have with it, that's why you never put oil in the boiling water. It covers the pasta and the sauce slips off when you mound the sauce on top. Mixing the pasta with the sauce ensures an even coat and marriage of the pasta to the sauce.
I learned this from my Italian mother in law and from eating in Italy lol
