Dinner Thread Sunday August 6 - Saturday 12

Tina was at ShopRite market at 7:30 AM and picked up an eye round roast. It's in the grill on the unlighted side in a cast iron pot salted, and peppered, and buttered; and baking at 350 F.
Mashed potatoes are in the Bain Marie pan ; all done just keeping warm above the pilot light.
Veggies will be corn on the cobb, and gravy when the roast pan fond is ready to be freshly made.

I used a lb of ground Italian sausage to make the meatballs, then spooned a mixture of Heinz chili sauce/mustard/Worcestershire and brown sugar over.
The mashed cauliflower is Green Giant brand.
I love it!! It's got the consistency of whipped mash and grits? It's made of good ingredients too.
Steamed green beans as well.

This past week, I've been exploring some homemade dishes. Started Sunday with a hearty vegetable stew, perfect for the chilly evening. Midweek, I tried my hand at a quinoa salad with roasted veggies and a tangy lemon vinaigrette. By Friday, I indulged in a homemade pizza topped with fresh basil, mozzarella, and sun-dried tomatoes. Wrapped up Saturday with a classic spaghetti aglio e olio. It's been a week of culinary adventures! How about you?

How did you cook the corned beef? Bake, braise, boil?

Instant Pot, pressure-cook for 1 hour, 30 minutes. Comes out falling apart, tender. Then take meat out and pressure-cook potatoes for 3 - 5 minutes.
