Chicken, Ziti and Broccoli

This is an easy version, because I was lazy tonight. It was delicious, and I will always make it this way now!.

- Poach cut-up chicken breast in a small can of chicken broth for 5 minutes.

- Spoon out the cooked chicken, and set it aside.

- Steam the broccoli and fresh chopped garlic over the same broth, for 10 minutes

- Cook the ziti and drain.

- Toss it all together with a lot of olive oil, s and p, and garlic powder. A little parm cheese on top at the table.

I posted a reply to this last night not long after you posted it Lee. It has disappeared for some reason :sad: Anyway I said it looks fantastic!! Yummy.

I forgot about the quick version I posted above.

So, I adapted another excellent version that I had in my files, to use up my leftover half of rotisserie chicken.

I'll call this version:

Chicken, Ziti, Broccoli with Aglio e Olio (garlic and olive oil)

1/2 stick butter
1/2 cup dry white wine (I used dry sherry - fantastic!)1/2
1/4 cup olive oil
3 cloves garlic, minced
2 broccoli crowns, pulled into florets
1/2 box ziti (or any other shaped pasta you have)
grated parmesan, romano, mozzarella or any cheese you have
salt and pepper to taste

I did this all in one pot.

In a large pot, steam broccoli florets for 5 mins. - set aside.

In the same pot, boil water and cook pasta. Drain and set aside.

Clean out pot. Melt butter, add oil and sauté garlic for a few minutes. Add wine and simmer for 5 minutes.

Stir chicken, ziti, and broccoli into the hot sauce. Heat for a few minutes. Add in cheese(s), salt and pepper.

Sprinkle a little more cheese on top, at the table.

This stuff is addicting!

Update: The stainless steel stock pot that I used to cook everything was a "beach" to clean because of all the cheese I stirred in there.

Next time, I'll use a non-stick pot!
