Couldn't find fresh basil this time of year, so I bought some house made pesto at a great Italian market...
I just watched Sara Moulton toss her dry sea scallops in flour, then shake them in a sieve to get rid of the excess flour. Then sauteed them in a little oil. She said that the flour dries up any moisture on the outside and the crust protects the moist meat on the inside...
Oh, and I got Daisy cottage cheese after seeing your post comparing it (3 natural ingredients ) with a competitor (Hood?) that had all kinds of stuff in it. But, boy, is it tasteless, LOL! Good for this recipe, though.

Thanks for the reminder, Lora - I haven't made one of these in awhile. Spinach, chorizo and Mexican blend cheese. For lunches this week (killing me not to dive in right now!)
