I'll either be making a pot of soup or a big salad.
What will you all be having?

Good to see ya back, Johnny !Tonight I’m making breakfast for dinner; bacon, scrambled eggs
, and leftover Spanish tortilla. I’ve been craving pancakes
but that may be over the top.
Not feeling too well today so lightly breaded chicken nuggets and cheesy cauliflower rice with broccoli View attachment 78432
Kathleen, that reminds me of a dish my Grandma used to make.
I have found that most fresh mozzarella lacks salt. Often, just adding salt & pepper helps a lotI have little sandwich plate-sized tortillas so tonight I made 2 tortizzas.
The first was a Margarita pizza - fresh mozzarella, my tomato, my basil, a bit of garlic oil. Too floppy and not a lot of flavor (my friend, Lynne, bought the fresh mozz - I've never been a fan).
The second tortizza was with a Mexican blend of cheeses, sopressetta and pepperoncini. Perfectly crisp and bursting with flavor!

And a glass of red wine.
My grandmother called them cafeteria noodles as well. But she would use whatever she had on-hand. I very much love them cooked with beef. For anyone interested:Kathleen, that reminds me of a dish my Grandma used to make.
Cafeteria Noodles she called it, only with beef.
I think I may make homemade split Pea soup using Peter Luger thick sliced bacon.
Leftovers- exactly like Kathleen’s.
